Cornmeal porridge with mashed beef and carrot

Angu is fine cornmeal cooked in water until it becomes a thick, smooth porridge, a grandma's classic in many parts of Brazil. At 6 months it takes the place of rice or potato, next to the beef, which brings iron, and the carrot mashed with a fork. Each one in its own spot, so your baby gets to know each flavor.

Ingredients

  • 2 tablespoons fine yellow cornmeal (not instant polenta with salt)
  • 2 heaping tablespoons lean ground beef (about 2 oz / 60 g)
  • ½ small carrot
  • ¼ onion, finely chopped
  • a drizzle of olive oil

How to make

  1. 1Sauté the onion in the olive oil, add the beef and stir until it is no longer red, breaking up the clumps.
  2. 2Cover with ½ cup of unsalted water, put the lid on and cook for 15 minutes over low heat.
  3. 3In another pot, cook the carrot, cut into cubes, in unsalted water until it falls apart with a fork.
  4. 4For the porridge, stir the cornmeal into 1 cup of cold water, bring to low heat and stir nonstop for about 8 minutes, until it thickens and pulls away from the bottom.
  5. 5Mash the beef with a little of the broth and the carrot with a fork. Serve with the warm porridge, each one in its own spot on the plate.

Tips

  • Texture (6 months): creamy, soft porridge, very fine and moist beef, carrot a little lumpy.
  • Cornmeal in cold water: mixed in before it goes on the heat, the porridge won't get lumpy.
  • Storage: 2 days in the fridge or 30 days in the freezer. Add a little water to reheat.
