No-sugar banana rice pudding

Grandma's rice pudding with no sugar at all: very ripe banana, stirred in at the end, does the sweetening. A creamy dessert for the child who already eats family meals.

Makes 4 servings Contains: milk

Ingredients

  • ½ cup long-grain white rice (3½ oz / 100 g)
  • 1½ cups water
  • 2 cups whole milk
  • 2 very ripe bananas, with speckled peels
  • 1 cinnamon stick
  • 1 pinch ground cinnamon (optional)

How to make

  1. 1Rinse the rice and cook it in the water with the cinnamon stick, covered, over low heat, until the water is absorbed (about 15 minutes).
  2. 2Add the milk and cook uncovered, stirring now and then, until creamy (about 15 minutes).
  3. 3Turn off the heat, remove the cinnamon stick and stir in the bananas, mashed with a fork.
  4. 4Serve warm or cold, with ground cinnamon on top.

Tips

  • Cow's milk: only from 1 year old. Before that, don't offer this recipe.
  • No sugar: bananas with speckled peels are the sweetest. Don't add sugar, honey or condensed milk.
  • Cinnamon stick: remove it before serving. It's hard and a choking hazard.
  • Consistency: the pudding thickens as it cools. If it gets too firm, stir in a little warm milk.
  • Storage: up to 2 days in the fridge, in a closed container. The banana darkens a little.
