Baião de dois (rice and black-eyed peas) with vegetables
Baião de dois is the rice and beans of Northeastern Brazil, cooked together in the same pot with black-eyed peas. Here it gets carrot and zucchini and skips the salty cheese and dried beef, so your toddler can eat the same dish as the family.

Ingredients
- ½ cup dried black-eyed peas
- ½ cup long-grain white rice
- ½ carrot and ¼ zucchini, finely diced
- ½ onion and 1 garlic clove, finely chopped
- chopped cilantro (or parsley and green onions)
- 1 tbsp olive oil
How to make
- 1Cook the black-eyed peas in water, no salt, for about 25 minutes, until soft but still whole. Drain and save 1½ cups of the cooking liquid.
- 2In a pot, sauté the onion and garlic in the olive oil. Add the rice, carrot and zucchini and stir for 1 minute.
- 3Add the peas and the saved liquid, cover and cook over low heat for about 15 minutes, until the rice has absorbed the liquid.
- 4Turn off the heat, stir in the cilantro and set your toddler's portion aside before salting the rest.
Tips
- Texture (1 to 2 years): well-cooked rice and soft peas that squash easily. Until age 2, lightly mash a few peas with a fork on the plate.
- No salt: take your toddler's portion out before salting the family's. The flavor comes from the sautéed onion and garlic and the cilantro.
- Cheese: if you like, a little fresh mild white cheese on top. Salty cheeses are not a good fit.
- Storage: 2 days in the fridge or up to 1 month frozen, in portions.
