Baked bean and carrot patties

Everyday beans become baked patties, soft inside and just the right size for little hands. It is a way for your baby to practice self-feeding with a food full of iron. Use the family's beans, set aside before salting.

Makes 8 patties Freezer-friendly

Ingredients

  • 1 cup cooked pinto beans (or any brown beans), drained, no salt
  • ½ small carrot, finely grated
  • 3 tbsp quick-cooking oats
  • 1 tbsp grated onion and finely chopped parsley and green onions
  • a drizzle of olive oil

How to make

  1. 1Preheat the oven to 400 °F and grease a baking sheet with the olive oil.
  2. 2Mash the beans well with a fork into a thick paste.
  3. 3Add the carrot, onion, herbs and oats and mix. Wait 5 minutes for the oats to firm up the mixture.
  4. 4With damp hands, shape 8 flat patties, about the size of a large coin and ¾ inch thick.
  5. 5Bake for 12 minutes, flip and bake 10 more, until golden outside. Let them cool to lukewarm before serving.

Tips

  • Texture (9 to 11 months): firm outside and soft inside, falling apart when pressed between your fingers. If they turn out hard, bake them less next time.
  • Mixture too soft? Add 1 more tbsp of oats. Too dry? A little bean broth.
  • Oats: may contain traces of gluten. If your baby has not had wheat yet, offer it at home first.
  • Storage: freeze the baked patties for up to 1 month and reheat them in the oven.
