Mashed cará yam, beef and zucchini
Cará is a very Brazilian root from the street market that turns soft and creamy when cooked, perfect for mashing with a fork. With the beef, which brings iron, and the mild zucchini, it becomes a complete lunch for the start of solid foods.

Makes 2 servings Freezer-friendly
Ingredients
- 2 heaping tbsp lean ground beef (about 2 oz / 60 g)
- 1 small cará yam (about 4 oz / 120 g), found in Latin markets as ñame (or taro)
- ½ small zucchini
- ¼ onion, finely chopped
- a drizzle of olive oil
How to make
- 1Sauté the onion in the olive oil, add the beef and stir until it is no longer red, breaking up the lumps.
- 2Cover with 1 cup of water, no salt, put the lid on and cook for 15 minutes over low heat.
- 3Meanwhile, peel the yam (wear gloves, the peel can make your hands itch), cut it into cubes and cook it in water for 15 minutes. Add the zucchini in cubes and cook 5 more minutes.
- 4Mash the beef with a fork together with a little of the broth, until it is very fine and moist.
- 5Mash the yam and the zucchini with a fork and serve each one in its own corner of the plate.
Tips
- Texture (6 months): fork-mashed, with lumps. No blender: the yam turns gluey.
- No cará? Use taro, arracacha (or parsnip) or potato.
- Storage: 2 days in the fridge or 30 days in the freezer, in portions.
