Mashed chicken with pumpkin and cauliflower
A colorful lunch for the first stage: chicken brings protein and iron, pumpkin adds vitamin A and cauliflower introduces a new, mild flavor. Everything is cooked without salt and mashed with a fork, as the Brazilian Ministry of Health's dietary guidelines recommend.

Makes 2 servings Freezer-friendly
Ingredients
- 1 small chicken breast fillet (about 2 oz / 60 g)
- 1 thick slice of kabocha squash or butternut squash (about 3½ oz / 100 g)
- 3 cauliflower florets
- ½ garlic clove
- a drizzle of olive oil
How to make
- 1Cut the chicken into small cubes. Sauté with the garlic and olive oil until white on the outside.
- 2Cover with unsalted water, put the lid on and cook for 15 minutes.
- 3Peel the squash, cut it into cubes and add it to the pot with the cauliflower. Cook 12 more minutes, until everything falls apart with a fork.
- 4Shred the chicken very fine and mash it with a little of the broth. Mash the squash and the cauliflower with a fork and serve each in its own spot on the plate.
Tips
- Texture (6 months): mashed with a fork, a little lumpy. Chicken finely shredded and moist, no long strands.
- New cauliflower: if your baby makes a face, offer it again on other days. It can take about 8 tries.
- Storage: 2 days in the fridge or 30 days in the freezer, in portions.
