- 14 oz (400 g) boneless, skinless chicken thighs, cut into small cubes
- 1 medium sweet potato (about 10 oz), cubed
- 1 cup cut green beans
- 1 ripe tomato, chopped
- 1 onion, chopped, and 2 garlic cloves, crushed
- 1 tbsp olive oil
- chopped parsley and green onions, to taste
How to make
- 1Sauté the onion and garlic in the olive oil. Add the chicken and stir until lightly browned.
- 2Add the tomato and cook for 3 minutes, until it starts to break down.
- 3Add the sweet potato and water to almost cover. Put the lid on and cook for 15 minutes over low heat.
- 4Add the green beans and cook 8 more minutes, until everything is very soft and the broth thickens.
- 5Turn off the heat, add the herbs and serve with rice.
