Galinhada (Brazilian chicken and rice) with carrot and peas
A one-pot dish from central Brazil for the whole family to share at dinner: the rice cooks with the chicken and gets its golden color from turmeric, with no ready-made seasoning. Your 1-year-old eats the same food as everyone else, just cut into small pieces.

Makes 4 servings (toddler and family) Freezer-friendly
Ingredients
- 14 oz (400 g) boneless, skinless chicken thighs, diced
- 1 cup uncooked white rice
- 1 carrot, finely diced
- ½ cup frozen peas
- 1 tsp ground turmeric
- 1 chopped onion, 2 garlic cloves and 1 tbsp olive oil
- chopped parsley and green onions to taste
How to make
- 1Sauté the onion and garlic in the olive oil. Add the chicken and stir until lightly browned.
- 2Add the rice, turmeric and carrot and stir for 1 minute.
- 3Cover with 2½ cups of hot water, put the lid on and simmer for about 15 minutes over low heat.
- 4Add the peas and cook 5 more minutes, until the rice is soft and moist.
- 5Turn off the heat, stir in the herbs and serve.
Tips
- No salt in the pot: cook everything without salt or bouillon cubes. Adults salt their own plates.
- Texture (1 to 2 years): chicken in small, soft pieces. Well-cooked peas can go whole; if your toddler still gags easily, lightly mash them with a fork.
- Moist rice: the toddler's portion should be softer. If it dries out, add a little hot water.
- Storage: 3 days in the fridge or 1 month in the freezer, in portions.
