Mashed taro root with beef and carrot

Ingredients
- 1 small taro root (about 3½ oz / 100 g), peeled and cubed (or 1 small potato)
- 1 small carrot, sliced
- 2 tbsp lean ground beef (about 2 oz / 50 g)
- ½ small onion, grated, and 1 clove garlic, crushed
- 1 drizzle of olive oil
- chopped parsley, to taste
How to make
- 1Boil the taro root and carrot in unsalted water until very soft (about 20 minutes).
- 2Meanwhile, sauté the onion and garlic in the olive oil. Add the beef, break it up well with a fork, cover with a little water and cook covered until it is fully cooked, with no pink parts.
- 3Mash the taro root and carrot with a fork, separately. If it is too thick, add a little cooking water.
- 4Serve side by side on the plate, with parsley over the beef. Let it cool to lukewarm.
Tips
- Texture (6 months): mashed with a fork, never blended. Ground beef well crumbled and moist, with no hard lumps.
- No salt and no bouillon cubes: onion, garlic and parsley already add flavor.
- Separate on the plate: this way your baby learns the taste of each food.
- Easy swap: taro root for potato, parsnip or yam.
- Storage: freeze in portions for up to 1 month. In the fridge, up to 2 days.
