Mild Brazilian fish stew (moqueca capixaba) with rice

The moqueca from Espírito Santo, in Brazil, is made with just fish, tomato, onion, cilantro and olive oil, with no coconut milk and no palm oil. In the toddler version there is no hot pepper and no salt in their portion: the fish cooks in the juices of the vegetables and is served in flakes, with rice.

Ingredients

  • 2 fresh white fish fillets, such as hake, cod or sea bass (about 10 oz / 300 g)
  • 2 ripe tomatoes and 1 onion, sliced into rounds
  • ½ red bell pepper, in strips
  • chopped cilantro and green onions
  • 1 garlic clove and the juice of ½ lime
  • 1 tbsp olive oil and a pinch of annatto powder (or sweet paprika)
  • cooked white rice, to serve

How to make

  1. 1Season the fish with the lime juice and crushed garlic and let it sit for 10 minutes.
  2. 2In the pot, add the olive oil with the annatto and make a layer of onion and tomato.
  3. 3Lay the fish on top and cover with the rest of the onion, the tomato and the bell pepper.
  4. 4Cover and cook over low heat for about 15 minutes, without stirring, in the vegetable juices.
  5. 5Add the cilantro, set aside the toddler's portion and break the fish into flakes, checking for bones. Serve with rice and a little of the broth.

Tips

  • Texture (1 to 2 years): flakes of fish and soft vegetables, chopped to fingernail size.
  • Family meal: set aside the toddler's portion before adding salt and hot pepper to the pot.
  • Bones: check every flake with your fingers before serving.
  • Storage: 1 day in the fridge. Fish is best made fresh.
