Mashed egg with potato and green beans

A simple lunch for beginners, all cooked in one pot: the egg brings protein and iron, the potato gives energy and the green beans add something green. The Brazilian Ministry of Health's dietary guidelines allow the whole egg, yolk and white, from 6 months, always fully cooked.

Ingredients

  • 1 small potato
  • 1 egg
  • 5 green beans
  • a drizzle of olive oil

How to make

  1. 1Peel the potato and cut it into cubes. Trim the ends and string of the green beans and cut them into pieces.
  2. 2Place the potato, green beans and the egg in its shell in a pot of boiling unsalted water.
  3. 3After 10 minutes, take out the egg and cool it in cold water. Leave the potato and beans for about 8 more minutes, until they fall apart with a fork.
  4. 4Peel the egg. Mash the potato and egg with a fork and chop the green beans very fine before mashing. Serve each in its own spot, with the drizzle of olive oil. Half the egg is one serving.

Tips

  • Texture (6 months): mashed with a fork, a little lumpy. Green beans well cooked, finely chopped, no strings.
  • Egg fully cooked: the yolk must be firm. Soft or raw egg is not for babies.
  • First time with egg: offer it at home, at lunch, and watch your baby in the following hours. Rash, swelling or vomiting: call the pediatrician.
  • Storage: potato and green beans keep 2 days in the fridge. Boiled egg, 2 days in its shell.
